Brand new member, recently bought beetroot wine in Aberystwyth, Wales and it was lovely! I was so inspired i got back to Barlick and instantly logged onto Freecycle to acquire a collection of wine making equipment, which i did, thank you to Chris!!

 

Anyway, now only got problem i dont know where to start!  Sooooo much info on web, but what i need is a local wine making class!!

Anyone out there got any info or practical help they can offer?

p.s. Been living in Barlick for 18 months and i think its great, and i love this site!

My dad used to make wine, Elderberry, Elderflower, Blackcurrant, he would have a go with anything he could grow in his allotment. He got a recipie for Marrow Rum which went something like this.

1 x decent sized marrow, cut stalk end off about 2" down marrow, scoop out middle to leave about 3" sides to hollow marrow, pack void with demerara sugar, make small (knitting needle) hole in other end, place marrow in muslin bag and hang over bucket or suitable collection vessel, hang in warm place, sugar ferments with remaining marrow and drips into bucket, add more demerara until all the marrow  (except skin) is consumed. take product in bucket and add yeast, place in fermentation bottles with traps etc and ferment until no further activity, filter and bottle. It should come out from memory, light amber in colour and fairly clear. Nectar.

Drink at peril!

You probably have to take a bit more care than my description but it was a "belter".

One of our neighbours used to make Parsley wine, we always knew the night had hit an all time low when the Parsley wine came out!

I think sour wine is caused by wine fly, tiny little flies like fruit flies that get into it. That's what I've heard anyway.

Watch out for marrow rum, I know someone who hung the marrow in a wardrobe and it exploded!  Maxxie and Pam, the most usual reason for sourness and bitterness in the wine is that it's been contaminated by airborne yeats or microbes.  That's why you have to have the water seal on the top of the winchester and make sure everything is sterile.  Keep trying, you'll crack it!  Moh..... have a look at how you've spelt 'capital'.....  give her a chance, she seems to be very polite.....
