Does anyone have any homely, easy to prepare, and tasty vegetarian recipes? I was thinking along the lines of Frittatas, Burgers, Quiches, Omelettes, Pasta, and Rice dishes etc.

Dry fry onion & garlic (optional) until soft, add mushroom, courgette (peppers, aubergine anything you like) fry a little more add a can of chopped toms & simmer away for a few minutes. Tip over any kind of pasta. I have this with spaghetti. Imindoors doesn't like pasta so he brushes a couple of slices of french stick with olive oil and then grills or drops it into another frying pan to toast then tips the tomato mix on top.

This quiche is fabulous and a great hit with veggies and non veggies alike.
1large onion
clove of garlic (optional)
large bag of spinach
teaspoon of marmite
spoon of flour
3 eggs
salt and pepper.
cheese (grated)
I haven't given instructions for the pastry as most people know how to make that, and it can be found in any recipe book. the above is for the filling.
method: Fry the onion and garlic in a large frying pan untill soft, add the washed and shredded spinach, cover and leave over a low heat till the spinach is cooked. Add marmite (vegimite is not nearly as nice but would do!) and the flour to thicken up the juices. take off the heat and beat in the eggs and cheese, keeping a little cheese back for the topping. Line a flan dish with pastry and pile in filling. cook on gas 5 (think thats right but check it as it cooks and adjust heat accordingly). add remaining chees in a 'spokes' pattern just before the end of cooking . I haven't put an amount for cheese as it's a personal thing how cheesey you like your flans. i hardly ever follow recipes, this is one out of a book but I have been doing it from memory so long this is the way i remember it. Hope it's not too vague.....ENJOY!

I quite like these 3 recipes. Note - no particularly accurate measures given, as I can never remember them
LENTIL AND LEEK LASAGNE
Smallish cup of brown lentils
Bring to boil in water and cook until soft. Drain, put aside, and keep the cooking liquor
2 nice-sized leeks
A carrot
4/5 mushrooms
Clove or two of garlic
3/4 peeled and chopped fresh tomatoes
Dried oregano
Soy Sauce
Chop the leeks, carrots, mushrooms and garlic, Sweat in butter for 5mins or so. Add the tomatoes, a pinch or oregano and a few drops of soy sauce. Stir and heat through. Add the lentils, and stir in. Keep cooking for a while, adding the lentil liquor if it looks a bit dry, until you have essentially what looks like a nice 'bolognese' sauce. Season to taste
Make a cheese sauce in the usual way. Add fresh chopped parsley to the lentil mixture, and begin to build your lasagne - lentil, lasagne, lentil, sauce, lasagne, lentil, cheese sauce, lasagne.....finish with cheese sauce on top.
Pop in the oven for about a half hour and Bob's your uncle.
LENTIL AND MUSHROOM GRATIN
Smallish cup of red lentils
A carrot
A celery stick
An onion
Soy sauce
Chop the carrot, celery and onion up really small. Sweat off in oil (NOT olive). Add the lentils and mix, then add a cup of water, and a dash of soy sauce. Bring to a gentle simmer, removing any 'scum'. The idea is to get a thickish mix - not really watery, but not solid. A quite thick soup is about right. So, go easy on the water and add if it's catching, but add a little at a time.
A lot of mushrooms - 10/12 button ones, which work best for this, as they don't leech too much colour.
4 Cloves of garlic
Butter
Lots of chopped, fresh parsley
Slice the mushrooms into pound-coin thick slices. Chop the garlic. Sautee off in butter until al dente, and then add the parsley. Stir well
Then, add half the lentil mix to a baking dish. Then add all the mushrooms in one layer. Add another layer with the remainder of the lentils. Top with grated cheese, pop in the oven for a half hour so, and you're done.
This dish goes really well with greens like sprout tops, kale, or spring greens on the side
PASTA WITH ROASTED BUTTERNUT SQUASH
One butternut squash
Butter
Fresh sage
Parmesan
Pasta - I like penne or rigatoni with this, but it doesn't matter really what you use.
Peel the squash and chop into thumbnail-sized pieces. Roast in the oven with olive oil. When soft, take it out, add the pieces to a bowl and add the butter and the fresh sage. Mix well, breaking the squash up a little bit.
Meanwhile bring your pasta to the boil and cook this. Drain your pasta, and add the squash mix. Stir to combine well, adding a little of the pasta water to loosen if needs be. Add parmesan and dish up.

My favourite veggie recipe, and I always have a bowl in the fridge, is this. Halve about eight tomatoes and place them in a grill-proof dish. Add olive oil, Worcester sauce or cider vinegar. Liberal scattering of sugar, salt and pepper on top. Grill 'til toms are just starting to go black. Turn all the toms over and squash them and do the same again. Turn out into a bowlm put in the fridge and use as an additive for other dishes, sandwich spread or use with other ingredients in a sandwich rather like a fresh pickle. Very tasty and very good for you.

I've just got a curry ready for tea and part of it is a nice veggie dish called Saag Aloo. Cut about three medium size potatoes into 1" cubes and brown for about 5 minutes in hot oil. Add about 1" ginger and 2 cloves of garlic crushed into a paste and a small green chilli with seeds removed. After about 2 minutes add a load of rough chopped fresh spinach, salt and some coriander leaves and cook with a little water for a futher 15 / 20 minutes. Very tasty and a nice with a dry mince curry and plain rice.Nolic
