Audrey, the love of my life, jewel in my crown, light in my darkness, thorn in my....she was wonderful.

She was also vegetarian. (What's one of those?).

We were doing just fine thanks, till we turned to music, then we sort of ran short. A bit.

Actually, Lancashire was our first tour and our worst. You guys double booked, forgot us or just closed the club down and we were left with half of what we needed to live on that month.

I have looked forward to that gripe for nearly 30 years!

 She cooked the most recipies. I mean the most.  I still cook some of them today, and thank her while I'm cooking them, because the thought of them makes my mouth water.

 One was a basis for so many more and here it is; I call it potage (I can speak French but it sounds better if you call it pot-age. Sounds sort of Earthy)

Take a load of potatoes (this won't harm your waisteline - I had a 26" waiste when we ate this) and boil them up. Drain off the excess water. In a seperate pan put some butter/oil/marg & lightly fry to transparent one onion, a few cloves of garlic and one whole hot dried chilly. - then chuck in some sage & thyme.

Season with sea salt and ground black pepper, then add the potatoes and mash to a thick creamy  consistency.

This is the base. And you can add to this to make all sorts that taste unbelievably different.

You can turn it into a 'stoup' as I called it - something between a stew and a soup - by adding vegetables and meat if you want, or you can make it into a creamy soup just by adding milk and boiling down a little, or you can simply add cheese and grill a bowl full - oooohhh I love that - you can do almost anything.

I used to love 'bone stoup'. Break up some bones (dem big bones) which still had some meat on them, and boil them so the marrow comes out. Strip off the meat and reduce the stock, adding rosemary and oregano. Add to the base.
