Belle, I often think the cause of dry and tastless steak in restaurants is that they treat it as fast food, cooked to order. Best cooked slowly like all meats and do everything you can to retain the moisture. Ever thought of cooking slowly wrapped in foil in a low oven? Works for all other meats.

I am doing a rerun of the hock and dried peas. I've got the peas mushed and a piece of Tamworth pork defrosted. I shall bang it all in a roasting tin and get it started in a slow oven before I go out with Jack this morning.

We here in OZ do not get the concept of having both Roast and Mashed Potatoes in the same meal. We only eat one or the other. But then, we don't understand your other concept of having a plastic tub inside the kitchen sink for the purposes of washing up. We wash up IN THE SINK. That is what it is for. And no, things do not get broken.
(but then we don't have our washing machines in the kitchen either!)

Maz the basin was there so you could empty slops from cups etc down the sink without having to let the washing up water out..in the days beofre double sinks etc..i don't use a basin either they get yucky underneath with tea stains etc.. and are a big nuisance!

Possibly beef stew...not sure. I've taken something I made a while ago from the freezer that does not have a label so it could be anything!  It could be lamb I suppose?!

I do use a bowl - If I turn it one way, it is suspended on the sink edge so does not good the stains on the base. That said, when they do start to look a little manky, a new one appears

I do my steaks in a griddle pan - get it hot, lightly oil the steaks and put in pan - only turn once.

Cold beef done with onions and gravy and parsnip & potato mash tonight - poss with cauli or carrots.

Nowt wrong with B&B pud Jules! Cheap, warming and nourishing. You could live off it and it's wonderful comfort food. I often make bread pobs with milk for the same reasons. Stew bit the dust last night, good to the end. New batch of peas almost mushed. Butcher's day today, I shall take a view, fancy pie and mushy peas, perhaps even twice!

Moh - I went with your recommendation, and got a Halogen Oven. Very pleased with it. Still experimenting but it roasts a chicken very well, - I even ate the crisp skin from last one.
