Does anyone remember the oatcake man who had a shop at the bottom of Barkerhouse Rd., Nelson and who hawked oat cakes round Kelbrook, Earby and Barlick, mainly in the pubs and clubs for that wonderful drinking man's delicacy "STEW and HARD"????
My father-in-law kept the Stone Trough Pub for over 21 years and the racks in the kitchen were festooned with soft oatcakes drying to make the "hard" for the stew and hard.
The "Stew" was a concoction of meats, pigs feet or a cow's foot and a touch of gelatine, peppers and salt, that were boiled for ever and ladled into basins to "set".
Commercial Travellers would congregate daily at dinnertime for a Gill of ale and a stew and hard and walk out smacking their lips.
My mouth waters at the thought of an oatcake with thick slices of stew and raw onion and a pint of Tetley's bitter beer. Food of the Gods!!!
Unfortunately we cannot get oatcakes in New Zealand, but from time to time I make the "Stew" and eat it with an oat biscuit similar to "hard", the missus thinks I've got summat wrong with me, just shakes her head and says "Who the hell eats that kind of tucker....???"

Stew, as I remember my mother making it,was 100% shin beef with bones put in a large iron pot and cooked VERY slowly (12 hours). The bones and any pieces of fatty solids were removed, and as much liquid fat as possible skimmed off the surface. The stew was then put into dishes to cool and set. She would cook 10 / 15 pounds of meat at a go, it was ordered as offal.

It seems so stange having Bob's user name on here again - I wonder how his wife is and how is family is coping having lost a man as large as life. I think we all miss him on here.

Welcome to the site Hugh. I might even make some stew this week, you've triggered me off by bringing this topic back to the surface. Moh, you're right but isn't it nice to read his contributions again. As long as the site is running he'll keep popping back to have a word with us.

One lamb neck, two trotters and three rounds of shin beef. All simmering away quietly and such a lovely smell.........

Now....there is another fact that doesn't immediately spring to memory. (What is happening to my brain?) I wonder if I heard all this second hand....perhaps i was on holidays. This is so frustrating....

I seem to remember his death and some of us made comment at the time. I still don't remember knowing how/why he died. Perhaps it will come to me, I will just have to go and chop more veggies until it all becomes clear.

My mum used to make beef tea, which was i think made from skirt! Ive never eaten "stew and ard"but plan to do so! Only you could make your own griddle pan Stan! Shall have to buy one and a rack now of course too! |
